Title: Noodle Pudding with Apples and Nuts

Yield: 1 Servings

1/2lbCooked broad noodles
2tbButter
3 Eggs; separated
1cSugar
1 1/2tsCinnamon
2 Apples; sliced
1/4cDried currants or raisins
1/2cChopped nuts

Boil noodles and drain. Heat butter in a skillet, add the noodles and cook just long enough to absorb the fat. Remove from heat, add beaten yolks, sugar, rest of ingredients and stiffly beaten egg whites. Place in a well-greased baking dish or sprayed with a non-stick spray such as Pam. Bake half an hour in a moderate oven, (350 degrees). Serve hot with any dessert sauce. From The Settlement Cookbook, AOL Holiday Kugel collection, complied by Joan C.
